Ginger Peach Make-Ahead Oatmeal

Ingredients
  1. 1/3 cup dry oatmeal
  2. 1 TB white chia seeds
  3. 1 tsp vanilla extract
  4. 1/2 tsp powdered ginger
  5. 3/4 c almond or other non-dairy milk
  6. 4 drops liquid stevia, or other sweetener of choice
  7. 1 TB plain protein powder
  8. 1 TB unsweetened shredded coconut
  9. 1 Perfect Peach (if out of season, use thawed frozen peaches)
Instructions
  1. Mix all ingredients except coconut and peach in a bowl, stirring well to make sure there are no clumps. Refrigerate overnight or let sit at least 30 minutes.
  2. To serve, stir thoroughly, then top with shredded coconut and peach slices.
Notes
  1. I like this cold in the summer, but you could warm it briefly in the microwave if you prefer.
