Ingredients
  1. 2 large carrots, scrubbed and chopped
  2. 1/2 avocado
  3. 3/4 C cold, filtered water
  4. 1 tsp curry powder
  5. 1/4 tsp coriander
  6. 1/8 tsp cumin
  7. 1/4 tsp turmeric
  8. 1 TB olive oil
  9. 1 TB lime juice
  10. sea salt and freshly ground pepper to taste
Instructions
  1. Place all ingredients in a high-speed blender in the order given. Blend 2 minutes until smooth. Serve immediately or refrigerate to enjoy chilled.
  2. If you do not have a high-speed blender (Vitamix or Blendtec), any blender will do, it will just take a few minutes longer.
Notes
  1. Store in glass jars and take to work for a quick, nourishing lunch (leaving you plenty of time for a lunchtime walk - or errands), or take on a picnic.
