Not only are they high in moisture, fiber and micro-nutrients, vegetables are probably the easiest way to vary your meals and keep them from becoming ho-hum. Take a fresh look at all the veggies in your market and notice all the different colors, shapes, sizes and textures. Do your best to eat a variety of colors every day; this is called “eating the rainbow.”
