Spicy Garbanzo Bean, Sausage and Kale Stew

Stealthily sneaking in green vegetables makes this extra good. It keeps well for several days in the fridge and freezes well for 2 - 3 months.

Ingredients
  1. 2 tsp olive oil
  2. 1 pound precooked spicy sausage, chopped (I used medium Italian-style chicken sausage)
  3. 8 large garlic cloves, crushed and chopped
  4. 1 can diced peeled tomatoes with juice
  5. 2 TB thinly sliced jalapeno chili (remove seeds for less heat), or 1 tsp dried
  6. 1 tsp ground cumin
  7. 1 tsp fresh rosemary, chopped, or 1/2 tsp dried
  8. 4 cans garbanzo beans, with liquid
  9. 2 cups chicken or beef broth
  10. 1 large bunch kale, stems removed and chopped in bite-size pieces
  11. 2 TB fresh lemon juice
Instructions
  1. Heat oil on medium.
  2. Add sausage and brown for 5 minutes
  3. Add garlic and saute until fragrant but not brown
  4. Add all other ingredients except kale and lemon juice. Bring to a boil, turn down to a simmer and let simmer at least 15 minutes.
  5. 10 minutes before serving, stir in and let wilt.
  6. Before serving, add lemon juice.
Notes
  1. Look for BPA-free canned tomatoes and beans. If you prefer less salt, rinse and drain the beans and add another 2 cups broth. Adjust the salt to your taste.
  2. If you prefer to use fresh sausage, remove casings and break it up with a spoon as you brown it. It will take a few minutes longer, but the flavor will be worth it!
  3. I like to make this on the weekend and to simmer it for hours to let the flavors develop. It's wonderful for lunch or dinner!
